Adeni Tea

 

Ingredients

3 orange pekoe tea bags

3 cups water

1/4 cup white sugar

10 cardamom seeds, or to taste

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1 (12 fluid ounce) can evaporated milk

\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n\r\n

Cut tea bags open and empty into a small bowl;\r\ndiscard tea bags.

\r\n\r\n

Bring water to a boil in a saucepan; add loose tea.\r\nBoil tea until water becomes dark red, 3 to 5 minutes. Stir sugar into tea.

\r\n\r\n

Grind cardamom seeds in an electric grinder or using\r\na mortar and pestle. Stir ground cardamom, cinnamon, nutmeg, and ginger into\r\ntea; boil until flavors are infused, about 10 minutes.

\r\n\r\n

Stir milk into tea and bring back to a boil for\r\nabout 2 minutes. Pour tea through a sieve to separate out solids. Serve hot.

\r\n\r\n

You can control the ratio of the water/milk by\r\nadding one more cup of water or one less. This is supposed to be a very sweet\r\ndrink, so feel free to add more sugar if you want the very authentic version.\r\nYou can use fresh ginger root (sliced) and cinnamon sticks if you wish but I\r\nfind the powders deliver stronger flavors. For the tea, I use Lipton(R) yellow\r\nlabel tea bags.
